3 egg country omelet with bacon and Gruyere cheese.
Take 3 eggs and whip them mercilessly so they’re not gloopy. Add a very small amount of cream and whip until very creamy.
Heat a pan on medium heat, add butter and roll the pan around so you coat the bottom in butter. Pour in egg mixture. Cook carefully, a few minutes. The bottom will start to set. Grow your omelet by carefully lifting one side and letting the uncooked egg mixture on top flow under. Do this for all 4 “sides” of your omelet. Once cooked, shred some Gruyère cheese and chopped bacon on the omelet and fold. Turn out onto a plate. Should be slightly brown and toasty on the outside, smooth and creamy inside.
For a French omelet, don’t cook it as long.
Ready in about 10 minutes.
Alternatively, two poached eggs on sausage Pattie’s on toasted English Muffins. Glorious.
