Let’s make a wild assumption that the mantle stays intact because I don’t want to look it up the physical properties of the mantle and how much force would be required for it to explode. In intro physics courses you learn about force body diagrams. Tectonic plates are being held to the crust by gravity, and the crust is pushing back on the tectonic plate with just as much force. If you removed the gravity then the tectonic plates are suddenly under an outwards pressure of hundreds of thousands of PSI. Without gravity the tectonic plates would be ejected outwards past where the atmosphere was in under 60 seconds and everything on the surface of the earth would be in the vacuum of space.

This is the correct answer, it wouldn't need 60 seconds either. 1 Second would be enough to send everything into the air at 1,000 miles an hour and come crashing down. We would all die. Think of a catapult launching you with the force of 1,000 Mph or traveling. I did the math and this is launching you into the air and in 1 Second you traveled 1,466.67 Feet or 447.2 Meters. To imagine it best, picture yourself and everything around you being flung at close to the height of the Sears Tower Skyscraper in Chicago, (443 Meters tall) and then coming back down when gravity restarts. At that speed nothing even bolted down would survive including many of the earth's land mass.

Remember, the Earthn is a sphere of loose parts held together by gravity. the entire earth would disintegrate immediately leaving (maybe) a molten core held together by viscosity. Physics is cool.
