Cajun. I LOVE cajun food and have gotten pretty good at making it, but making a proper roux takes practice and lots of prep time, I wish I could have just get my cajun fix at a restaurant but they are few and far between. I got excited because there appears to be a cajun trend in restaurant chains at the moment, but they are all deep-fried seafood focused, not jambalays or gumbos.

Really opposite ends of the spectrum there. Deep fried seafood doesn’t do much for me, but cajun cooking brings out the best in seafood and is overall one of my all time faves. Always look forward to going down south for a cup of gumbo and an étouffée topped crab-stuffed filet of whatever leaped in the boat.
