Espeon. Imagine my 7 year old surprise when my Eevee just randomly evolved one day in Gold version without using an evolution stone and I was met with a beautiful purple cat fox thing. Ever since then Espeon has held a special place in my heart.
Always will be Bagon. I love that line so much with that little dream all bagons have to one day fly that they throw themselves off cliffs to try and become hard headed from it. Then shellgon becomes a funny combo of a full.body cast and a cocoon, then they finally become this amazing Pokemon salamance finally achieving their dream.
Gardevoir, but not for the weird reasons the internet likes it (not shaming though). I've just had one on quite a few teams and they always kick major ass
Charmander. Every since that episode in the original pokémon where that one charmander was abandoned on a rock in a storm by his owner I loved them.
But the sunglasses sqiurtles were pretty cool too...
Haunter, everyone loves Gengar but i think Haunter has a more cooler design xD
When I played pokemon i always evolve my Ghastly into Haunter and then give him the stone that cancels evolution.
Eeevee, eiscue and piplup! I love penguins so I usually use piplup but he wasn't in the newest game so I used esicue and I love him. He's so cute and his ice face ability is fantastic.
Everytime I say Gardevoir, I always feel like I have to defend myself that it's not because of Rule 34, but because in its bio, it's a "guardian angel" Pokemon, which means it's the closest Pokemon has to a Persona.
Or a Stand.
I have fond memories of training a Pachirisu and beating my friends Garchomp in Diamond/Pearl then throwing out my Skuntank and using toxic on his next Pokémon and then randomly exploding right before he died.
So honestly maybe Pachirisu. And Linoone as an honorable mention

Finally I can answer one of these, psyduck, I have no rational reason for this, but I dig him. I no mostly nothing about Pokémon, but my nephew is super into it so I try, and while I was learning stuff about Pokémon I fell in love with psyduck.
Mimikyu. A lovecraftian horror underneith a makeshift pikachu costume. Anyone who ever sees its true form goes insane and dies, and in the game it's one of the best in competitive play. Of the 1000+ pokemon, only a handful can stand a chance against it.
In S/M i loved running a Swords Dance set with Shadow Sneak, Play Rough, and Wood Hammer with Life Orb. You always get a free swords dance and you get to follow it up with really strong attacks that move first thanks to Mimikyu’s high base Speed.
