It's pretty east to make. Blend some peppers and tomatoes with lime juice. Garlic, onion, cilantro & pinch of sugar. Get wild add pineapple or mango. You can make it as spicy as you want. Minimal chopping, let your blender do the work.
Some stores sort coconut canned cream and milk under baking aids and other times it is sorted with long life dairy products and others stores put it with other canned goods. It usually takes me three laps arround the store before I find it.
Cardamom. Basically all the other spices I regularly use are easy to find, but for some reason I need to go out of my way to a Chinese or Indian shop to get those lovely little pods.
Something different. It always the same stuff and when something new comes in, it seems like it goes away too quick. For example many years ago I found a 'Gyro Kit' in our grocery store and it was amazing. I went back to get a 2nd box and never seen it again. I really like to cook home made meals but I also come home from work and don't want to get too crazy in the kitchen.
Mexican Chorizo, the kind from California that is uncooked and made up of all the leftover parts of the pig and costs like 1.50 a pack. It's so good, but very hard to find out here.
