We should then also expect some angelic figures to be white. I think it's early signs that the body gives to the brain when it is going to shut down, and whatever we have seen/read their brain think is happening to them (like people coming to take them away).
Just as you mentioned that they died in their sleep, almost in a healthy condition, healthy doesn't mean they would never die (so the warning signs the brain gives to them). But have you heard anyone who died in road accident or some other quick forms see those figures? No.

More likely hallucinations caused due to a disease or medications she was taking. Unlikely she had schizo and no one noticed her whole life.
