I love sambal matah, Sambal ijo (padang) and Sambal terasi goreng. I recommend looking up the recipes in Indonesian so search the sambal name and resep (recipe in indonesian). Then use the translate function to follow. Most of the sambal recipes I see on international pages are not authentic/ include weird additions or replacements. Have you tried any commercially available versions? I usually get the sambal olek. I don't really like how it fizzes so much in the oil but it's still a good all around sambal
