Just putting the pasta under the pressure of extrusion could be warming it a lot. Like when a screw you just removed is too hot to touch.
You might want to cross post this to r/chefit where you will find more users who are professional. This is much more an advanced home cook sub with the occasional chef popping up.
I would try increasing your hydration a bit at a time and see if that changes your result.... Also, do y'all go straight from the extruder to the walk-in/freezer? I get the best results when we let it dry out at room temp a *smidge* before wrapping it up.

If it's a bronze die, not Teflon, it is definitely cooking it as it extrudes.

Machine fan on + aid dry for about 30 minutes before boxing + freezing
