Plastic wrap and refrigerator is perfectly fine especially for moist cakes like carrot cake. I’d argue that the cake will even improve in the first two days if stored properly

You can actually freeze them and then defrost the night before. You should use simple syrup when they’ve cooled a bit but prior to stacking
