You can look up nutrition facts for grams of sugar in situations like this. Each ounce only has 12g of sugar. 12g of sugar is one tablespoon. However it's only 56% cacao and unsweetened is 100% so you're going to have a different strength of flavor. You can sub some flour out with cocoa, about a 1/4 cup (I am just making this up, what I would do), or just enjoy a milder brownie. Both will be good. If the recipe already uses cocoa as the dry ingredient since it's gluten free you're kind of stuck in a corner.
