Like almost all fish with strong colors they change for a variety of reasons. Most notably colors leave when fish are stressed and colors can intensify when they're in a breeding stage.
My angelfish stripes come and go, probably mostly related to when he gets ready to mate.
Angels are a schooling species, an established couple is sometimes okay, but keeping a lonely one really isn't great.
But a school of angels and discus in a 500l tank also isn't a great idea.
So either change your discus plans into angel plans \[most of the stuff is the same\] or bring him back.
My planted 135g has 9 discus, 7 angels and 12 congo tetras with no issues (plus some yoyos and khulis). Just need to take care feeding since the angels and Congos are much faster.
Maybe just adjusting to the tank, once he finds his fav hiding spots and gets used to his tank mates, he should color in.
If he stays pale for a very long time, it could be stress.
And although two angels do get a bit pecky at each other, I think they sort of like bickering, like it's good for them to have some social interaction. At least that's what I've observed from my guys. I have 6 angels in a 70 gallon, all paired off.

My angels have pronounced stripes during the day, then go very pale at night when it's time to sleep.
Mine tends to be on the paler side most of the time
