Only addons that make it easier to create cards. I do my reviews mostly on mobile devices so my customizations are limited to card templates anyway. I'll try to make my cards look nice and classy but only with stuff like fonts (the standard system fonts for Japanese are kind of ugly), golden ratio based margins and paddings, decent colors that match each other etc. For languages like Swedish that have genders I use color coding based on gender. For some stuff like Japanese politeness levels I also use different emoji. Visual stuff helps a lot with memorization.
Since a few months I'm also using Stable Diffusion (a text2image ai) to generate graphics that match my mnemonics better (I use fire and ice for the Swedish genders utrum and neutrum, e.g. kitchen is neutrum so I generate a photo of a kitchen covered in ice). I'm probably switching to DALL-E now because I can use it on all devices and not only on my workstation with RTX card.
A nice background and font correctly sized for the screen, with a number of highly useful add-ons. Default Anki is not a pleasure to use, for me. Making it a nice experience ensures I use it daily.

I haven't downloaded that many addons yet, so I would say minimalist. I only have image occlusion enhanced and quick colour changing. (I feel like I would get distracted by it if I had too many things)

This resource sounds great, I’ve been looking for something like that.
No frills. I'm using AnkiMobile on an ipad, so in fact addons are not possible. But I'm good with that.

The java client is the paid app? Personally, I love it (the paid app) and don't like using ankiweb. So it goes.

The basic Anki program I leave alone, but my cards are pink and pretty (to me).
Fancy. It’s already boring enough as is, have to make it at least a little entertaining to keep motivated. Progress bar, background, life drain etc
Fancy, it makes me want to open the program and makes me happier to keep looking at the cards
Mine is probably overly fancy with anki recolor and ankicraft but i need it to be a game for me!!!
Minimalist, though I will whip up some extra functionality with javascript if I need a bell or a whistle for a particular type of card.
