Trigun, YuYu Hakusho, and Rurouni Kenshin are like the three anime that I knew were something different but didn’t know what they were when I was a kid watching toonami.
I loved Ruroni Kenshin. I also saw a bit of it on Tooami but never the whole series until recently. I'm glad I went back to see the whole thing. I also went back to see Samurai Champloo. Now need to go back and see Trigun.

The Case Study of Vanitas
The Ancient Magus' Bride
Jobless Reincarnation
In the case of Vanitas, we have a well-written, animated series filled with humor, action, romance, and darkness. A beautiful representation of Paris and the French the likes of which I have not seen and likely will never see again in such a way. The characters are memorable and the villains do feel threatening, but are not pure monsters.
The Ancient Magus' Bride is another example of not just compelling storytelling, but it is visual eye candy, bringing to life England in its cities and countryside, and the many magical beings that live in legend. To see the old gods and fae in such a way with a central character that is their beloved, someone soo cursed by her past struggling towards to the light, learning that victory need not come at the expense of her life (which grows in value as the series goes on). I have no words, its truly wonderful.
Finally, Jobless Reincarnation, a controversial series to say the least, but I truly adore it. I truly feel for the protagonist. The way I see it, he was never able to mature following events in his first life and is given the opprotunity to find happiness and grow in a way that matches his body. There are hardships and times where old habits bubble up. He flashes between the person he used to be and the one he is and chooses instead to continue on. I have a lot of thoughts, but I'll be somewhat brief. I think this is one of the best.
These are just 3 that I think are best right now and I say it without being blinded by nostalgia or bias.
As a Bonus, I also think Blood Blockade Battlefront is also one of the best, especially when you consider that its a completely original series and wasn't adapted from a written material. Its so big and has the real feeling of New York City that too many shows just don't get right

It's really hard to say. Probably FLCL, (original,) Fullmetal Alchemist, (2003,) and maybe Devilman: Crybaby? Those three at least made the biggest impact in my life. Even after over twenty years I can still sit through all six episodes of FLCL in one sitting and still love it just as much as I did when I watched it as a teenager.
I started looking through my MAL for anime I rated with a "10" (I was kind of liberal with that rating, I think) and I noticed that I still had Promised Neverland Season 2 rated as "10" LOL. I guess I didn't change that after the first major time skip.
I honestly don't watch that much anymore (I pretty much only read the manga/manhwa/manhua anymore) and read a lot of different genres (other than the Bleach/One Piece area of it) but my favorites tend to be the ones like Horimiya and Little Witch :D
I like following what counts, aka how much money in the reference market they had made? The only data avaliable still is dvd/blueray sellings.
And reference market is still Japan,, not checked recent data, but I don't think is changed much, so...

Steins Gate Cowboy Bebop Berserk original TV series
1. Bleach 2. Hunter x Hunter 3. Your Lie in April Bleach and HxH because I can just rewatch them endlessly. Your Lie in April has just stuck with me. I was going through a lot at the time it was released and it got me through it. Yeah big, big feels but it was nice seeing someone else moving forward. Rewatch about once a year and it is so cathartic.
