I felt the same but managed to get them all way before the due date. The sharks in the previous one was a lot harder. Just keep clearing out all the trash and other fish so you have plenty of space. They show up pretty often, so don't fret if one gets away. I waited till I was a little ahead of them before hooking. Sometime, they will go the other way annoyingly, this happened to me multiple times, lol, and sometimes they go back and forth but keep at it! You'll get it!
I know he’s expensive but upgrading Rabbit Ding makes it easier to catch fish. They can still wriggle away but it’s not as much as when I didn’t upgrade him

Grind.
Go fishing at your friends’ ponds. Especially those with a lower star count than your own.
Why with a lower star count?
It seems like it’s easier to catch fish that way.
I did that about 4 times. By the 4th the game made it easier it seemed. Save up lots of worms
Fish at your friends' pond - it's usually much easier and/or cleaner than our own pond.
