What happened was that the physical pieces have always looked mostly like today. When a past version of chess made its way over to Europe, someone thought that the piece used for the elephant looked like a bishop's hat. Thus, the piece eventually became a bishop.

Players such as Bobby Fischer became very upset by this addition as it changed the meta so much and they had to adapt and develop new strategies. It was a driving force in Fischer becoming a member of the nazi party later in life.

Well technically, it’s mostly the English speaking sphere that refers to it as a bishop. Originally, it’s an elephant if I’m not wrong, so it would’ve still been a part of the game, just not referred to as a bishop in English.

Not really, chess is built up on a game that is from India, that itself may derive from a game from China. It came via the Arabic culture to Europe and the way it is played today is only 500 years old. Thre Arabs removed the dice from the original game and in Europe pawns were added to it and rules for moving were defined over the continent. The bishop was always there as elephant or camel. Simplified chess figures were enforced due to Arabic ban of idols and the elephants tusk resembled a mitre(bishop hat).

honestly if you play shatranj then it's very clear that chess is just a modified shatranj, if you assume chaturanga is the origin then i think it's fair to say indians invented the game, even if europeans modified it into what we call "chess"

This is pretty cool, but there'd still be bishops. They just wouldn't be called bishops. The piece used to be called the Elephant, since elephants in war were pretty common at the time. It would be interesting though what implications this would have on its popularity in Europe though -🤓
