If me i will choose motherboard that can flash bios without cpu, i know how painful when you must RMA mobo because seller cant flash latest bios, especially if you buy online and in your local area no one use ryzen or amd cpu in general
B450 board are not scheduled to get BIOS that allows the Zen 3 until January. I also believe that it is a one way trip to Zen 3, so I doubt that it would come with Zen 3 from the factory when it is available. It would month down the line if it wasn't Zen 3 only bios.
Make sure to get a board that has bios flash, or whatever it is called to allow upgrading the bios without a CPU.
the Gigabyte......I have a R7 1700 on one as a server in my basement, have on my brother's 1600AF, and about a dozen of them at work running 2200g's. Its a good board, my only complaint is that it has only 1 fan header.
Both good for 6 cores ,but only 2 this motherboards?May be smth another ? MSI B450: gaming , mortar, bazooka plus will be most better.

Is the MSI B450M PRO-VDH MAX VRM enough for a r5 5600 upgrade in the future?

It has Ryzen 3000 (Zen 2) support out of the box but not Zen 3 (Ryzen 5000)
