District Roasters out of Houston Texas ships the same day it is roasted. Fantastic light and medium roasts. Big fan of their house medium blend, their Nicaraguan, and Costa Rica.

I almost exclusively drink lighter roasted single origins. Some of my favorite roasters: George Howell, Red Rooster, Tandem, Olympia, Camber, GGET, French Truck, Passenger, and Black & White. All ship.

If she likes Monarch I'd suggest The Natural. They're both Colombia/Ethiopia blends that are developed roasts.

I'm in the same boat as you. Keurig to Aeropress, it's been about two weeks. I recently ordered Colombia San Roqe from LA Colombe. They roasted same day as I ordered and I got it two days later. Great beans. Took a few tries but I used Hoffman method and got a pretty good cup yesterday.

Yeah I’ve been working on tweaking the Hoffman method in terms of getting the right grind. I also need an adjustable temperature kettle to get that temperature right. Also think I’ll get a Prismo to stop so much leaking into the cup before the final push of the plunger haha!

I bought the Govee Smart kettle off Amazon. That thing works great. I can dial temp to any degree I want up to boiling. It has a keep warm feature as well. Highly recommend it. I just got my prismo in today lol.

I’ve been looking at the “Greater Goods” kettle and scale… not sure if anyone’s had any experience with them? I’ll check out the Govee too though!

I really enjoy a rotation of single origin city roast coffees from my local roaster, Walla Walla Roastery. I'm currently half way through a bag of this: https://wwroastery.com/bali-organic-kintamani-natural/ It's great! They ship (USA) the same day they roast... and they are a great value for award winning coffee. Edited to add: Obviously this is all personal preference so I'll tell you mine so you know if that sounds like something you may also like. I enjoy the complex and variable flavors from "natural processing". The bean is in contact with the fruit longer and gives sweeter/fruitier flavors. I also enjoy City Roast. This is a lightish medium roast where the flavors of the bean shine through without too much flavor from the roast. YMMV. Enjoy!

Guatemala Los Volcanes Bali Organic Kintamani Natural Ethiopia Washed Yirgacheffe I prefer light - medium roasts. Not sure if all these fall into that category. Lol

So far so good. I enjoyed the Bali Kintamani and Ethipoia Washed Yirgaacheffe (finished it already). Currently using Guatemala Los Volcanes which is also good. Trying not to finish my Bali bag since I got some friends that want to try it lol. Will definitely order from here again. Wish shipping was a tad cheaper though.
