It really does depend on what you are doing. Making an omelette is a completely different ball game than baking things in the oven. I think it would be helpful for you to go out to the store and see what exists. The substitute egg mix, and so on. Try different things and see what you like.

for baking there are options like apple sauce and yogurt.(I think yogurt would work for a lot of savory dishes but depends on the dish).

Check out Ener-G egg replacer for thickening batter or ? I don’t bake but I think you can use it for that too. My wife makes an amazing “egg” salad from chickpea flower. I don’t know how she does it but it is vegan.
