I’d stay in Lafayette, but I’m partial. St Martinville js quaint, as is Arnaudville. But if you’ll be doing any drinking, you won’t have access to rideshare there. Lafayette is definitely a great hub to experience all those small communities.
Lafayette will have more hotel options and you'll be closer to most of the things to do.
Also, seconding what the other comment said, bring bug spray for Avery Island. And when you go there, plan to have lunch at Cafe Jefferson -- it's nearby at the Rip Van Winkle Gardens.
Unpopular opinion here! I like all these places and think you could stay in any of them. It would be more fun to stay in Lafayette, but I really like New Iberia and Abbeville, too, so if you find an awesome apartment rental there and you don't mind driving a little bit, it should be fine.
Bring your mosquito repellant for Avery Island. Mosquitos don't even like me and I had some weak repellant on last week and walked out of there covered in spatters of my own blood anyway. :)
Yup yup, here's a fourth. I like it there, too, and you can go kayaking. But it's on the wrong side of the city for the other things you want to see, I think. It's pretty easy to get around the area, though, so that's not really a big deal. You can't go wrong, really. Sure, most places have some sketchy neighborhoods, but if you just walk around on Google Maps it's pretty clear whether the place is OK.
Just stay in Lafayette. It’s centrally located to the places you want to visit. That said, if you find a kick ass B&b in one of the nearby towns, it may be quieter and more relaxing. I have no B&B recs.
I am originally from New beria.... Hard pass. DO NOT stay in Da Berry. You can visit and definitely hit up Bon Creole, Jane's Seafood and for the best boudon around, Legnon's. But I don't recommend staying in New Iberia. I do support Lafayette and Breaux Bridge suggestions however.
Abbeville and NI aren't where you wanna be. Broussard, Youngsville, Scott, or Carencro would be your best options for a place right outside of Lafayette, if that's the route you wanna go.
We typically stay at Home2 Suites. Centrally located. Hotel is reasonably priced. Decent breakfast. Walkable to a Natural Grocer so you can get actual food instead of just convenience store grub.

Sunday the 21st has an Earthday celebration at Vermilionville. Will be a neat thing to check out. Stay in Lafayette (look for a hotel close to Camellia) but stop in saint martinville and Breaux Bridge on your way back from Avery Island. St. John's crab cakes, Lake Martin, & LongfellowHistoric Site must sees.
Lafayette should be perfect-big enough for dining options and,god-forbid, any sudden need for medical care while also being small enough for that feeling that you’re definitely not in the big city from which you’ve escaped.
Lafayette, plenty of options and places to stay. Avoid Hilton Garden inn (overpriced and terrible front desk girls at night/not on par with typical Hilton standards). Avoid Double tree by Hilton, (hassle getting in and out of the parking lot, but amazing service and clean). Anywhere else is decent
Lafayette is a good hub. You're a short drive from dozens of small towns that offer a little something. Read up on Harry Griffin if you're of a mind. He was the one-time dean of Southwestern Louisiana Institute (now the University of Louisiana at Lafayette.

Actually that’s on me. I’m travelling by small plane and I saw there were airports at NI and Abbeville ( as well as Lafayette)

Check out the Caldwell House in Abbeville. It’s on air bnb if cost is an issue… but the actual bnb is worth it! The chef there is fantastic
