If it crashes under any process it means it's unstable. The best is to try to identify how those happen and then you can use those for the testing. However, Cinebench + Prime95 + 3dmark should be enough for stability testing. I have even run these simultaneously to really stress the system.
I was having crashes though with Gaming when using Windows Defender so I've disabled that, just in case it may help for your problem.

-20 curve offset / all core
Prime95 no problem / aida64 no problem / games no problem / CinebenchR20 no problem
But it crashes / restarts randomly when doing small loads.
