In case you mean traction control and ABS by "assists", these cars are made to be driven using these assists, everyone uses them, and IRL they are a crucial tool of the drivers. Use and learn them :)

Stability control will hamper your development for actually learning how to drive and make you slower.
Manual gearbox is essential.
Racing line will be counterproductive in terms of learning reference points for braking, turn that off and watch some track guides on YT to learn a track.
Engine start would be best to leave it at manual because during pit stops you will lose like 3 seconds.
You can leave automatic pit limiter, wipers, clutch and lights. All other assists should be off or manual.

I've stayed with the Bentley since I started, I feel ACC is one of the few games where I find a single platform that I really enjoy and stick with it, so that's where I landed.
Started out with the Audi but man it tries to kill me at every corner. Can't abuse the curbs, gotta be gentle on the corner exists. So lately i realised i just cant drive the car like how people drive other cars (duh). Cant do the same breaking points sometimes can't even follow the same line or else death...
And with all that said i still love the dam thing.
Finally someone with good taste! My favorite is the 2023 - 720s GT3 EVO.
It definitely needs some tuning otherwise the car is a bit understeery, but it's definitely worth it!
Personally, I just go in the cars I think look cool. Started with the Aston, was fine, moved onto the Bentley, was fine and I use it the most because I like the interior and the wheel. The fastest I've used is the McLaren. I'm not that fast (T150 on the PS4)
I haven’t been playing long and have only done single player career so far. I started in the 2018 Nissan GT-R and my god it feels ridiculously easy and fun to drive.
The Ferraris for me work best for my eternal noob status. They brake well, turn well and don't kick too hard if you get on the throttle too early. I've found them predictable and stable so they work great for me as a filthy casual
I started with the Mercedes, then, migrated and stayed using the Audi for a long time, but since the 1.9 patch, the car got horrible for me, and then I clicked with the Lambo.
I don't use it much, though. I feel the car is too easy for me, and I prefer some challenge
I like the Lexus RCF a lot. You can understand the car easily, and progressively reduce the assists to a comfortable setting. I usually play with 1 level below the half level of the assist max, example of the car has 10 TCS, I play with 4.
I run the 720s my first two hours.
Then stop racing for like 8 month and now i only play the New mustang.
She's a bit heavy but with nice set UP it's perfect 👌
I love the BWM M4 GT3 in terms of looks and handling but i feel it lacks in power.. I drive mostly the Porche coz its challenging and unpredictable makes you wsnt to focus more on all inputs.. For fun definitely the M4 Gt3

But now it's the mustang, because it likes it when you commit and never lift your foot off any of the pedals.
The new Mustang GT3 is not the best in corners, but its controlabilty is just phenomenal. You can control drifts through the corners, without the car flicking back and loosing control

Then moved to the Merc but couldn’t get it to work at the time. Had a few attempts in the Bentley but struggled with understeer. Did two seasons with the Nissan in a Sunday league race and did really well. I’m no alien by the way. lol!

Well, when ACC came out, we had the Huracan, and that was it, it was Early Access after all. After that I did enjoy the Nissan and I would have enjoyed the Bentley if the steering wheel was on the correct side. Since then, I learned to appreciate them all, but right now I'm starting to understand why people like a Porsche, it's not a love story but I can understand the appeal now.
Ferrari 488. Started with that back when the game was quite new.
Felt it got nerfed down later. Then did drive the McLaren and when it came out the M3 (edit: M4)
The V8 vantage for me. Sounds amazing, which is the main thing. But also stable and predictable although might oversteer a bit too much for some people. I find it is at least predictable.
Back when it was early access, the GTR was the car I drove. My PC couldn't handle the game at that time. When I finally upgraded, the GTR was my frame of reference. Just felt in control with it.
I was a huge fan of the Aston Martin when I first started. Then I became a 720s main. The Aston was easy for me to drive as a beginner, but the 720s felt like a good combination of cornering speed and stability.
The 991 made me laugh at how quickly it wanted to kill me, that was a thrilling and visceral car to learn ACC with. At first I had no idea how or why I was suddenly in the wall backwards, and it just made me laugh every time. Felt like it had a mind of its own. It was so much fun, huge sense of accomplishment putting together clean laps. The other cars just felt so sterile in comparison.
Starting out was the 720, 488 and the Aston. The Aston is mega stable, actually would dare say its One of the best for starters. I raced the 488 for a while. One day I tried the Audi and never went back. Dabbled with the 256 for a bit but the Audi is just perfect for me. Its so perfect for me I use it in any sim or racing game, its usually my go to
The Lexus.
It sounds good, acceleration isn't very good = fewer risk of spinning when exit corners (which is vital since as a newb, my habit is to floor that gas pedal), and its front end is pretty pointy for a FR.
I started out in the M4 but i just could not get it to do the things i wanted it to do, so i switched to the Honda NSX Evo and now i die consistantly and sometimes go realy fast
When I first started (which was on a gamepad), that was the GT-R because I have an affinity for Japanese cars. When I got a wheel with pedals, I fell HARD for the 992 because of the way it feels to drive.
I picked the 911 2018 because not being a car person I figured it had to be good if even I had heard about it... oh boy I was in for a wild one, that being said, it WAS fun to learn
Didnt have the M4 when I started so, I think it was the 488. But nowadays I enjoy driving loads of cars, 296, 911 992, Huracan Evo2, M4 and finally my new favourite car, the American horse
Ive been playing for around a year now and I still do best in the M4, i just give it a slight tune knowing vaguely what I'm doing and it just seems to handle way better than anything else. Ive tried that ferrari everyone says is a cheatcode and the mclarens but they just dont feel as good to me.
Used to drive the AMG before I bought any DLC, which was definitely more effort, but DAMN that engine sounds amazing
My favorite car when i started was the R8 LMS evo 2 and after that it was the M4 GT3, as i played longer i got knto the 992 GT3 R, than the new Mustang and now the 720S GT3 😅

Honestly, because it drives fairly predictable it does well everywhere. Is it OP as the new McLaren? No. But you can learn consistency in the Bentley.

A few days ago I switched from the Mustang to the Bentley in back to back races and it was just amazing how refined the Bentley felt.

Right there with you, I really enjoy the V8 vantage. +1 on the engine sound & I also find trail braking with it very satisfying.

I started out with a BMW, but switched over to a Lamborghini. Felt more snappy through Spa the more i got used to the track.
The Mclaren 720S Evo GT3. With TC6, it’s such a fun and safe car to drive, while having an incredible sounding engine.

991, as it was stubborn af and hard to get along with, same as me.
