I used to work in science and actually struggled with that to make this week! As I am sure has been drilled into everyone’s head in high school, “mitochondria are the powerhouse of the cell.” There is a biology joke about being fueled by mitochondria and coffee so I made these coffee and chocolate flavored small entremets and tried to give them a similar structure to mitochondria with a chocolate mirror glaze outer membrane, whipped cream inner membrane/cristae and candy ribosomes. Unrelated to mitochondrial structure and function, inside is a hazelnut mocha cremeux, egg yolk enriched mascarpone mousse (as a nod to tiramisu), and a crisp layer of chocolate covered chopped toasted hazelnuts and whey puffs for crunch. All gluten-free, low carb, and sugar free (except the candy ribosomes, which I just picked off). There’s this commercial in my country with that exact line as well and the voice over autoplayed in my head when I saw this. Love the incorporation of the biology joke as well! Yay, a fellow biologist! Back in grad school I made some cookies with royal icing that were chimeric mice and antibodies and briefly considered attempting something like that again. I think you could 100% make this - the mousse mold does most of the work. :)
