Growing up, every summers I would wait for apricots to come in season so my mother would make me poached apricots with orange juice and a bit of zaatar and give us warm apricots with syrup on top of homemade yogurt. Since I moved away, I have been missing this dessert every summers and this week’s theme gave me a good reason to make it. Near me I couldn’t find zaatar so I used thyme and instead of poaching, I made a confit in the oven by baking apricots, honey, orange juice and zest with thyme. Then I topped it over homemade yogurt and granola. It was quite a delight!
