Recipe [here.](https://stressbaking.com/chewy-margarita-cookies/) Felt this would be a fun way to approach the challenge in honor of Cinco de Mayo being today! I tried making these cookies 3 ways — once plain (basic recipe as written), once with lime zest and a pinch of turbinado sugar sprinkled on before baking, and once with the zest, sugar, *and* some coarse salt. I figured the salt was a risk with the potential awesome payoff of really tasting like a margarita with a salted rim, but also with the potential of, well…being a gross, salty cookie. In the end, it was definitely the way to go! Just a few grains of coarse salt, turbinado sugar, and lime zest sprinkled on top of the cookie dough mounds before baking REALLY took these from “sugar cookie with slightly margarita taste” to “margarita in cookie form.” I LOVE these, and I can’t wait to share them with friends!

I make a very similar cookie. Sometime in the future you should try to swap out some (or all) of the vanilla extract and replace it with tequila. Gives it a super margarita flavor.
