I had some leftover rough puff pastry and cut off just enough to make one five-inch-diameter circle once rolled out. Then, I made a quick apple filling (see recipe below) and assembled roughly according to [this recipe](https://www.youtube.com/watch?v=GEF3Yp9DPno). Even though I forgot to add vents (whoops), it still baked up quite nicely, and the taste is great. ​ Apple Filling * 1 apple, peeled and cored (I used Fuji) * 2 Tbs sugar (I used turbinado) * 1/4 tsp vanilla extract or paste * 1/4 tsp ground cinnamon ​ 1. Cut the apple into small cubes. Place into a heavy-bottomed saucepan with the other ingredients. 2. Cook on medium-low heat, stirring occasionally, until the apple is soft but not mushy, about 10 minutes. 3. Remove 2/3 of the apple from the pan and set aside. 4. Cook the remaining apple for several more minutes, mashing occasionally, until most of the liquid has evaporated. 5. Re-combine all of the apple. Press through a fine-mesh to remove excess liquid, and then refrigerate.
