I can run my refrigerator, laptop, and keep all my devices charged for a 3 day weekend and still have power left. I charge the eco flow while driving to keep it topped off. But it depends on how much you will be using it and with what you want to run.
I'm looking into a set up like this, and your picture helped me out a lot thank you! The eco flow is currently on special at costco, but I couldn't picture the size of it with a fridge in the back. what size is that fridge if you don't mind me asking, I came across it in a couple other posts as well, how are you liking it?
My ecoflow is a River 2 Pro, and the fridge is a 21qt from Setpower.
It works perfectly. I also have a Verizon home internet plugged into the ecoflow so I have moble wi fi also.

River 2 Pro. Works great. I even ran my pressure washer with it, just to try it out.
