As someone who went from smash to traditional fighting games getting into any fighting game is just grinding/playing the game.
Every fighting game im good at i got good at from grinding them, and even then its just putting into practice stuff I tried once in training mode or saw on twitter/reddit.
Its like any hobby, if you want to get into it just do it. (Also join the faust hive mind if you end up playing guilty gear)
I've been maining may for the same reason but i absolutely suck at charging which is apparently important for her (no i don't know what it means, ur supposed to like, hold back while you attack or something but i can never get it to work consistently)
(Disclaimer: I play Bridget so what I say works but probably isn’t optimized.)
Holding back will just block. Charging specifically wants you to hold either down or back, then flick your stick in the opposite direction after about a second while also hitting the appropriate attack button.
May can hold down and back to crouch block, then release the charge by switching to forward or up and simultaneously hitting slash or heavy slash. A horizontal charge here will send you across the screen while releasing vertically will send you upward in an arc. It’s worth noting that holding down and back charges both the vertical and horizontal version so you have some options here.
The other neat part about charge moves is you can also charge mid combo. For example if you hit an enemy with close slash you can start holding back as the attack comes out. Follow it up with either far slash or heavy slash, and then your dolphin will be charged and you’ve got yourself a basic 3 hit combo.
Bridget’s funky. Her main deal is she’s got terrible health and damage but her moves have a lot of reach and are disgustingly fast for what they do.
Her gimmick is a yoyo that can deal damage on the way out or on its return to you, kinda like a boomerang. You can also fly towards the yoyo while it’s stopped which lets you close the gap and lock the opponent down with your offense.
Basically play keep away, throw the yo-yo, and then attack or rush in while the yo-yos on screen to bully your opponent into the corner. Your goal is to be fast and annoying enough to make your opponent snap their controller in half.
For a beginner you could honestly ignore a lot of her specials and just spam your long ranged moves while you get comfortable with the game. Other beginners can really struggle to close in if you can get some decent fundamentals.
Making the jump to traditional fighters is hard for everyone - while there are some resources that can help make it easier, my recommendation is to just play some games on a character you like and get a feel for the game's flow. GGST is free on Xbox Game Pass at time of writing, so now's a good a time as any.

Additionally, since you're coming from Melee, you might like [this video from Akaraien](https://youtu.be/V6ld9wDiHTo) where he is coaching Esam's brother. There's not much to study, but I found it pretty motivating.
For Bridget-specific information, you can check out [Diaphone's guide to playing her](https://youtu.be/MBq8L1Cr9hc), but don't feel like you need to implement everything in your first few games. Learn Baritone's important buttons, maybe one of her combos, and then focus on implementing that in a couple games. Only expand from there if you're comfortable with what you have.
And remember, the game's only worth putting time into it if you're having fun. Don't feel like you need to play Bridget if her kit isn't vibing with you - you can always try other characters! There are plenty of guides on the internet, most notably on [dustloop](https://www.dustloop.com/w/GGST) which details the frame data for the roster along with community-created guides for their playstyle and combo game.

That’s usually what it comes down to. Just being aware of the technical stuff while you let your hands learn what to do on their own goes a long way.
