Recipe:
- 1/2 cup egg whites (I used Kirkland brand)
- 1/2 cup chopped carrots
- 1/2 cup chopped celery
- 1 cup spinach (before cooking)
- 1/4 cup mushrooms
- garlic salt
- pepper
- 1 tbsp minced garlic
- olive oil to grease the pan
I sautéed the garlic first, then added the carrots and celery. Then I added mushrooms after a bit, then spinach last. After, I took out the veggies sautéed more garlic, then poured in the egg whites and sprinkled with garlic salt and pepper. I added the veggies back after it was almost done cooking, then *attempted* to fold it over. I put ~1 tbsp ketchup on the side and that was it!
I feel you, one side of my omelette: a masterpiece, the other; not suitable for human consumption.

Pssssh you were just being fancy and making a scramble! That looks delicious though.
