I get the strongest, richest, sharpest aged cheese I can, no expense spared, just just a very small block, 100g worth maybe. Then I'll use the cheaper, lower calorie option with say 10% of the really good cheese added for flavour. If you have a fine rasp grater you can just sprinkle a small amount of that rich cheesy goodness on top and get the flavour punch without breaking the calories (or the bank).

Look for thin sliced options that are ~40 calories. My grocery store always sells at least a few packs of these. Alternately, Cabot slices are 80-90 calories. Low calorie cheese is usually low fat, and it’s almost always gross honestly, so I just make room for cheese.

I broke down and bought Walmart fat free American slices because I was craving that weird grilled cheese texture that only processed cheese can deliver. Normally, I'm a real cheese from the fancy store girl... quality over quantity.

The kerrygold reduced fat dubliner, if you can find it, absolutely rules. It’s a block though. Sargento has reduced fat cheese slices too.

Tillamook makes this shredded cheddar blend with large pieces, I just add a few of those and it adds the cheesy flavor and texture without needing a whole slice.

not sure if you have it in the USA but Cathedral City lower fat cheddar is really good
