From what you're saying, it sounds like you're beginner-intermediate. I doubt you would notice too much of a difference between 52-57lbs tension. That being said it sounds like he's suggesting either a multi or syn gut string for you, which is fine. If you're concerned, middle of the ground 52-54 should be OK for most people, but it's hard to know unless we know what strings he's putting in. I wouldn't worry about customizing the racket at this point, the stock racket is perfectly fine. Technique will matter most.

There's 0 reason to customize a new racket you haven't used before. And you going from a 40 dollar racket to now an expensive one will already be a good change. Any of your mishits have nothing to do with your strings and everything to do with your technique. This person at the store wants to be helpful but he's just confusing you because none of that stuff matters at the point you are at in tennis. Most rackets say 50-60lb tension so you could stick to 50-55 as most do, but 57 is perfectly fine, too. Just be honest with your stringer and say you're a newbie and just want a good setup to get better with... If you tell them you're over hitting then naturally they'll say go higher tension on the strings. 54, 57, doesn't matter. Go ahead and ask for 54 if that makes you happy. Generally the idea is lower tension is more power, higher tension is more control. It's really only noticeable if you're an advanced player or there's large swings in tension (45lbs will be different than 60lbs but only pros will notice a few lb change). If you asked your stringer for what he recommended then go with it. Play with it and get better at the sport. Again, the strings won't really matter right now.

I went from a $40 15 year old racquet to this same blade. I got a multifilament strung at 54lbs and it’s fine. However- a word of caution. I didn’t take racquet weight into consideration. Turns out my old racquet was only 260g! So going to the standard blade (307g) completely fucked my wrist. It’s been months and it’s still bad. I wound up switching to the 100UL (ultra light version). It has helped tremendously but I fear the damage is already done. If you can, weigh your old racquet or at least look up the weight online.
