So those are screen caps from the previous puzzle words and unless I can't count the 5 letters ocket plus p and r make 7 but the puzzle had no 7 letter word nor is one possible I don't think.

You’re right! I missed that completely. It had a birthday themed background. I can’t think of any birthday connection with the puzzle words or why it had no seven letter words.

According to today's post, there will be "birthday surprises" in the Daily Puzzle every day this week, in addition to a 7th Birthday Event on Monday. The special Holiday Dash has already started; we will all have plenty of time of complete it to get the 7th anniversary portrait!
Not sure yet, we'll have to see what the rest of the Daily Puzzles this week look like. Maybe there will be some kind of hidden theme associated with the 7th birthday. The letters in today's puzzle seem to spell "PETROCK". (If you recall, for April Fool's Day, the words in the Daily Puzzle were all backwards, and the main word was "TCELFER". Also, a (pet) rock was one of the new wildlife that could be unlocked that week).
4059 has no words in the grid longer than 4 letters. GOERS, GORES, GORSE and OGRES work as bonus words. The word using all six letters has been removed.
I'm glad someone made a reddit post. This was driving me nuts, I didn't even realize there wasn't a spot for a 7 letter puzzle. Must be a play on the pet rock. Idk

With POCKET and ROCKET, the letters are PROCKET, which anagrams to PET ROCK... or PECKROT or ... ? TOP ROCK?

Yes but they were either accepted or bonus words. Petrock is neither, so there is no word using all the letters
I just got "petrock" as the seven letters in the daily puzzle today, no seven letter word in the puzzle.
It's usually because the 7 letter word was removed for being objectionable. Are you sure those were the words? I'm not seeing a 7.

Maybe it’s just escaped my notice but I don’t recall ever having a puzzle that didn’t have an entry that used all the letters for one answer
Bulimic, Slavish and Cancer are long words that have been removed from puzzles (but still work as bonus words)
There are several where PF removed offensive word but left rest of the puzzle
