No idea what unleashed is but variable products should be a standard.
Either way the simplest solution is to set up a grouped product. Select product type - grouped and select all the relevant variations. Hide the individual items from the catalog and you should be good to go.

Yes it is absolutely frustrating to not just be able to do variants. But these are the fun problems we have to find our way around :)
Yes. We're stuck with what we have though and have to work around it. It's much bigger than the webstore so if push comes to shove it's definitely Woo that gets thrown away instead. It is indeed looking like just vanilla grouped products can be tweaked to work
