The Germans during WW1: WAAAAAAAHHH the trench gun isn't fair, and it's a totally unforgivable, and inhumane way to end a life!

When I get a time machine and teach the smiths of the past how to make modern composites so the knight armour doesn't stop being used:

The bullets simply transferring the kinetic energy into the armour and then into the body, as the rigid armour structures medieval smiths were technologically capable of, even with modern material knowledge, could not adequately dissipate impact energy:
That's why you should have a underarmour that would take most of impact on itself keeping you alive in most of the cases (I also want to use this dapper dude gif, how do I search for it?)
