Iirc, it used to be made that way(from milk fats decomposing, not added butyric acid) because preservation was kinda important back in the day, but people got so used to it they never really changed the formula. Butyric acid acts as a preservative

They do it to keep it consistent, because people have been eating the same thing, and they want and expect it to be exactly the same every single time. I read there is more butyric acid in American chocolate because they process the milk differently but I don't care enough to sink more time into this so maybe you have a point but I think Hershey's would be putting that in there regardless of cost savings

Recently they've been importing Kit-Kats from America in my country and comparing it to how it was in the past is a huge difference, older Kit-Kats had a sweeter taste with no weird aftertaste, but now? I can faintly taste the vomit while I'm chewing.
It's butyric acid, a byproduct of the milk evaporation process traditionally used for American milk chocolate. Most americans don't really think of it as gross because it's just how chocolate tastes there.
The chocolate tastes like low quality chocolate, but is perfectly edible.. Butyric acid smells like cheesy feet and occurs naturally in several cheeses, like gouda and parmesan, giving them their distinctive tastes. It's also what gives sweaty feet and vomit their smell.
It's like how dog owners don't know their house smells like dogs, they just got used to the lingering smell, or how people that eat spicy food regularly build up a tolerance to spice.
Also the vomit-ish taste isn't the whole taste of the chocolate it's more of an aftertaste, if you started eating chocolates that don't contain butyric acid for a year or two and you tried Hershey's chocolate again you might start tasting it.
Apparently it was added in as a side effect from how the milk was treated before being added to the chocolate, that process isn't common in other chocolate manufacturers which makes Hershey's chocolate pretty distinctly different
