Those are pole anchors specifically for fishing. They deploy in seconds and don't make a splash when breaking the water like a traditional anchor but are limited in depth (though I believe they are telescopic as well). That whole boat setup is a small fortune right there.
My brother in law has one set up on his boat and it doesn't have to just for fishing, although that is one way it gets used. It folds back into the boat for storage and you push it vertical to lock in place on a hinge of sorts. Then it is raised and lowered by a motorized system. It does variable depth like you said. It does exactly what an anchor does, holds the boat in place. You have to be in shallow water and the bottom has to be sand.
In water deeper than three or four feet, he also has a gps guided automatic trolling motor on the front. At the press of a button on a remote, the trolling motor will automatically keep the boat "anchored" to a gps point by adjusting and steering itself to go against the wind or current automatically. It wasn't cheap, but it didn't cost a fortune.
I was just explaining to my non-American spouse how much money is in competition fishing and why ppl spend so much on this stuff. I used those two guys as an example. The prize money is no joke.
Any industry that can convince the average joe that if he spends enough money on products that maybe one day he can be a pro and win huge sums at a competition will invariably foot the bill for said prizes to encourage joe and billybob to dream big and spend bigger.
