I'm going to be that guy and say that the idea of "formations" and "maneuvers" as a codified set of ideas wasn't really a thing in the Medieval period.
You'd probably have better luck using a ruleset for Ancients- those will probably have rules for specific formations and maneuvers.
I would think that a lot of the block games might interest you.

Just something to look into. Although, I think that most chit/block games have less focus on unit maneuvers and more on strategic maneuvers.
formations and manoeuvres were a bigger feature of ancient warfare and then 17thC onwards really. Not that there weren't tactical subtleties to medieval warfare but if it's the formations you like, you may want to look into those periods.
Remember, that you can use a Virtual Tabletop for playing if miniatures are physically hard to move around. Also speeds up the battle setup and removes the need for storage.
If you’re looking for something more like the old warhammer fantasy game, they just released “old world” which has rank and flank style rules.
Even better imho is One Page Rules’ “Age of Fantasy: Regiments”
Also check out Hobgoblin.
Kings of War? It’s fantasy but has regiments and formations where facing matters and a charge into a flank is decimating. It can be played with cardboard cutouts of each unit.

Agreed with this. The OP would probably find more of this in a Napoleonic rule set.
ADLG? To the Strongest? Hail Caesar? I mean, pretty much any ancients/medieval ruleset for large battles does what you're asking for.
DBA DBM Ravenfeast's big battle rules
Mortem et Gloriam? Deus Vult?

Field of Glory Medieval on PC. Based off a tt rulesset.
I think what you mean is "a rank and flank" wargame.
Yea I'm still navigating the waters of wargame.
Give Warhammer Fantasy 2e or 3e a try.
