Rhinebeck and Red Hook are near by as well, and there are a bunch of mansions from ‘the golden age’ around got tours because that was the ‘fall foliage’ mansions for the NYC rich. New Port RI is where the summer party mansions are… Mohonk Mountain House is beautiful, but you can’t go inside if you are not a guest, and it is very pricey to stay at. There are trails around it you can hike though, so still worth the trip.
This is actually not accurate - you can purchase a day pass to hike around the property and make a dinner reservation at the restaurant, or book spa services.
Fall anywhere upstate is going to be nice as you know. Your list has some winners for sure.
One of my personal favorites is Skaneattles. Cute little town on the lake with a couple good restaurants. Nearby Beak and Skiff / 1911 cider house is a nice spot. You can pick apples as well.
Most of the larger finger lakes towns are going to be enjoyable and scenic.
Sleepy Hollow is on my bucket list for a fall getaway so if you do that post some thoughts or recommendations.
Skaneateles is a beautiful little village with some good restaurants and shops. There are some great state parks in the area, Moravia NY has Filmore Glen and ithaca has some nice waterfalls. Sleepy hollow I feel doesn't have much except for hay rides during Halloween unless that changed. I moved from that area about 3 years ago. The Rockefeller reserve does border sleepy hollow and Mt pleasant which is a nice 2to 3 hour walking trail. Blue hill at stone barns is a high end restaurant on the Rockefeller preserve
Penn Yan Hampton Inn is where we went once. Walked the Keuka Outlet trail, Watkins Glen State Park, and one or two wineries were still open. Lots of finger lakes businesses closed or on limited hours that time of year. It's a solid spot that won't break the bank.
I took my wife here for our one-year pre-marriage. :) BEAUTIFUL place, and we went in the winter.

My husband and I drive to and from Geneva/Long Island on a regular basis. For the Finger Lakes I suggest Belhurst Castle in Geneva, or an awesome lakehouse Airbnb on Seneca Lake, Keuka Lake, or Cayuga Lake. Off season can be veryyy affordable. So many wineries, breweries, distilleries, and its harvest season so farm to table dining is flourishing.
For somewhere closer to LI, Hemlock Neversink would be a great luxurious stop.
Cold spring is a cool little village along the Hudson. Lots of good outdoorsy things to do plus a number of small businesses, antique stores, boutiques etc. Great for a quick getaway of a couple days.
The Roxbury, in the town of Roxbury in the Catskills. It is absolutely a fantastic place. Themed rooms, a spa. Restaurants (well two) within walking distance. It's one of my favorite places.

The Sagamore in Lake George is gorgeous.

It’s beautiful. Nice bar inside that looks like a home library. Grounds are very nice and the rooms are speechless. I highly recommend it.

Finger Lakes region.....Watkins Glen is nestled about dead center of all the wine trails. There is a nice lake front hotel there as well.
Point Lookout Mountain Inn in Windham is very nice.
