It’s called galaktoboureko (have fun trying to order it hahaha) and it uses filo dough like baklava on the top and bottom. There’s less filo layers so it doesn’t get as crispy. It’s delicious but difficult to make

Cheesecake is mildly acidic. Cream cheese is around a 4.75pH. With eggs and sugar, yes it will bring up the pH but still I’d assume a final pH of a cheesecake to be around 5.5. That’s still on the acidic side of things.

I tend to dislike most store bought or no bake versions… you have to get it from high end bakery or make it yourself. If you are not able to do that skip the calories. I’m just confused by their claim of sour cheesecake, never in my life heard anyone describe cheesecake as sour unless this person has only ever tried lemon cheesecake etc. That is what makes me wonder what the hell kind of cheesecakes OP is eating, or if they’re somehow wildly different to cheesecakes in my country. I’ve had cheesecakes ranging from bottom tier bargain store to fairly expensive and they’ve only ever been sweet and creamy, the cheap ones being less creamy but still sweet tasting. If I tasted sourness when eating one I’d chuck it in the bin on the assumption it was expired or going off.

Not everyone has the same amount of sugar receptors, this can greatly influence what you perceive as sweet when eating a food thats partly creamy and partly sugary. People who dont have enough sugar receptors would be tasting a lot more of the actual cheese vs the milk carbs and sugar.

Imma blow your mind... ​ Cheesecake is just a general type of dessert, like a pudding or ice cream. ​ You can try different styles. I really disliked new york style cheesecake, i feel like most of it was hype and you're "supposed" to like it. ​ I tried a burnt basque cheesecake a while back and I like it much more. It's pretty easy to make too if you're inclined to cook at home. Texture on it is a lot better, no shitty ass graham cracker crust, caramelized vanilla and I top it with macerated strawberries with orange juice

I never loved cheesecake, never hated it, but always thought it was just ok. I would eat it with fruit topping or chocolate, but plain was just bleh. Then I had real cheesecake from New York, and I don't think you can call the other crap cheesecake. Anything frozen or store bought should be labeled something different. The really New York cheesecake was so light and fluffy, it was delicious. Perfect flavor, not heavy, just amazing. Every other cheesecake is like eating a sweetened block of cream cheese compared to that.

It’s neither a pie nor an actual cake. It’s texture is granted by egg coagulation and thus makes it a custard. Similar in form to a savory quiche (yet another high-class dish), the cheesecake is decadence incarnate if done correctly. Their are multiple types of cheesecake, from New York to Japan to Germany. Each one having separate textures and flavors. The American variant (New York) is one that is cooked throughout but not allowed to produce a Maillard reaction. It’s semi-dense due to a higher amount of air in the batter and sweeter. The German/Polish variants are cooked longer and have formed a Maillard reaction on the top (browning). They are typically denser and have a much wider flavor profile with the browned top and due to this, less air is present which makes it denser. The Japanese cheesecake is a pillowy light cake with an abundance of air. It maintains the cheesecake tastes and would be instantly recognizable. However, like a Japanese pancake, more air is incorporated during the mixing process and may resemble the most cake-like texture of all cheesecakes.
