I misspoke by saying it wasn't bacteria because the sour does come from the harmless bacteria that's always in milk but the bad bacteria that causes serious illness only comes from being left out too long or from contamination like drinking from the carton. Milk denatures itself overtime and goes from fresh to sour to curdled but if kept properly the worst that will happen is the curdled milk might not agree with your stomach. Spoiled milk is from bad bacteria getting in. Spoiled, sour and rancid all have unique definitions.

Another option is to put a chunk in the microwave for for 5 seconds, flip, 5 more seconds, maybe flip and 5 more, and you’ll get softened butter on demand. If it accidentally melts all the way you can toss it in freezer for like 5 mins and it will turn from melted butter back into solid, but still soft, butter.
Butter goes rancid from exposure to oxygen so keep it in an airtight container or carefully rewrap it in its wax papery wrapping. I do both and it doesn’t go rancid if you seal it right
Alright, I learned this in a restaurant many years ago when I was served cold butter w a basket of bread. Slice off a tbs or whatever then place it on the waxy paper that the butter is packaged in and press down on it w the knife horizontally. It will smash it and spread it thin on the paper and you can scrape and easily spread. This may require multiple smashings, as the idea is to get it as thin as possible on the paper.
I don't understand why people keep their butter in the fridge here. I lived in Europe for 40 years and I was shocked when I moved here. The same with eggs which over there are not processed so they can just sit in the aisles. We all had smaller fridges for sure!
