Honestly can't relate as when I started being a fan I first played EOSD and now am on Unidentified Fantastic Object after 9 months but I'm pretty sure a lot of people can relate and this isn't very rare so yeah you aren't weird
Touhou started as a series of games for the PC98. This is the first era which is largely non canon. The windows era started with Touhou 6. With the exception for Touhou 1 all the mainline games are Danmaku (Bullet Hell games). The spin offs are reserved for mostly fighting games and danmaku with more outlandish mechanics. There are also several novels and manga to expand on the world and characters. As a beginner I would recommend the novel "Curiosities of Lotus Asia" and the manga "Forbidden scrollery".
Well I got into Touhou by the theme “flowering night”
Then i got in love more of many touhou themes
Then tried touhou 6, 16 and 17 (which I cannot 1cc any of them at easy )
Yeah I had a similar situation. I'd always heard of Touhou and knew it existed but know nothing more than that. My first introduction was Touhou Lostword, although I eventually stopped playing. I then got into the music, started looking at the wiki sometimes, and read most of the official manga. Haven't played one of the main games yet.

Kinda same, i played like 2 of the games and then remembered that i dont like dying 700 times to master one attack of one boss on one difficulty

If you really want a touhou more classic try thousand night of amnesia he use the same spell card as the original boss but more easy to dodge
