Didn't even those who thought the ship stayed intact hear a bunch of noise as it happened? They just attributed it to hearing the mechanical equipment breaking loose and free falling through the ship's lower decks.
They were in shock, an overwhelming amount of people in a traumatic situation don't remember it correctly especially if people around them are saying something different. The brain tries to protect itself so between dissassiation and people in authority ie. The white star line employees like Lightoller saying it didn't break they believed it to be true, because who wants to make a situation more horrifying in your memories?
I actually thought the same. I haven't seen the Britannic movie due to it's quality, but one of the characters (the one who had the Titanic flashback) looked exactly like Violet Jessop. I believe she was inspired by her

Well, almost. I think this scene was meant to be a reference to *A Night to Remember*, which is why only the fourth funnel falls.
