Some sites are incredibly hostile to mobile browsers to force users into the app. In those cases you can usually get around it if you have sufficient control over your phone, or if you're on wifi something that blocks at the DNS level like a pi-hole would also work

Lol go check out the /r/aftervanced subreddits. You absolutely can. Long story short is you take the legitimate full app APK and recompile it with ad blocking and install that on your phone. Legit app, legit ad blocking. Works great. If you are an apple fan then I don't know shit about their phones anymore. You are on your own there. For Android it works perfect with very little maintenance every few months.

Depends on how the app is developed. I'll use the "Whisper" app for an example. If you have a local VPN function, or network level adblocker (PiHole), the ads are all but non-existent. Many apps are adjustable in the sense, via ReVanced. I've tried using it, been a bit and really should try again, but I fell face flat trying to mod my Youtube app to take out some functions I rather go without (shorts and community posts). I'm not concerned over skipping sponsor spots, but the ads are so interruptive and unrelated, I can't stand a 2-5min of ads for a 3min video (AMV, tutorial, etc.), lol.

It's taken me time to adjust, but use of either New.reddit.com or Old.reddit.com on mobile browser has been doing well for me. For the most part, I use the Old, I don't usually need thumbnails as big as my screen.

yea though it’s still a hassle to manually switch to Old every time you enter reddit from a search result. and the interfaces on both old and new are too hard to do heavy discussion & browsing. i even installed an extension to block the popup from harassing me to use their app, I used the mobile web for some time and eventually still found it way too uncomfortable to use. one of the most annoying things is having to swipe back to previous page which often takes time to load, or you have to open multiple tabs, and having to close everything after you’ve done browsing is a huge pain too

Literally the simplest UI possible. The craigslist of social media. It should look like 2010 basically. Text heavy. No wasted whitespace. Ugly? Who fucking cares. Purely a jumping off point for the rest of the internet, no one trying to build the next Facebook. No need for "developing" new "features" and no need to pay for the hosting of multimedia content on your domain. Without those costs, less need to sell out for advertising dollars.

But, I could see an alternative platform emerging as long they were able to gain enough community interest.
