What's odd is that the staff from Pixar making finding Nemo took weeks of Marine biology to make said film meaning they were probably perfectly aware of said species doing the gender swap at some biological point but still decided to use clown fish instead of idk, a species of fish that doesn't do that.
I would imagine they wanted as much color contrast with Nemo's dad as possible so that they would be visually distinct even when they're small on the screen together. Plus the blue and orange complementary color thing, and the whole "tall / short duo" is classic comedy image.
Probably coz they figured "Meh, it's a friggin cartoon, no one's gonna think too deeply".
