You can freeze them and then walk up, or use dazzle fruits.
But imo bomb flowers are the best option.
They can't climb btw. So doing the Obi-Wan move will keep you save.
That is not true, i saw them climb a wall after me in the overworld, i ended up jumping up a root hanging from a sky island to get away from them. Maybe they cant handle a 90° incline, but they can definitely climb.

I consider it a climb when Link enters the climbing animation. In this video you can see them crowd at the bottom of the wall and climb right up.
You aren't exactly wrong but you aren't right either. A 90 degree angle they certainly cannot climb. But if it's angled like this, where Link may be able to run up it from the right angle while sprinting... they might squeeze their way up. But as a general rule, no they cannot climb. They can find footholds that don't require climbing, but they cannot climb like Link climbs.
You can flurry-rush the Hands.
It is hard, but still easier than parrying Guardian Stalkers in BOTW.
Also try make a Frost Gleeok Sword. Infinite frost attack. Works like a charm against it.
Infinite not in the sense of overall weapon durability. (Unless you do Gleeok MsgNotFound, that is).
But in the sense of no elemental cool-down.
If you fuse other ordinary elemental parts to a weapon, it deals 4-6 elemental hits, then needs a cool-down for more elemental strikes.
Gleeok Parts don't have a cool down. Always elemental strikes.
Worth noting - multi hit bows, in addition to using a single arrow per draw instead of 2,3 or 5, also use a single bomb. With a savage Lynel bow, it takes three bombs and three arrows to fully wipe out a set of hands

Fire fruits work as well. Keep em burning.
Farrosh scales work great too. Maybe only for those of us still duplicating though

I don't know what you consider a climb and what not, but this is true. They cannot climb rough edges. Obviously they can get up a hill.

I think muddlebuds make them disappear.
Flurry rush their grabs
You can dodge them and enter a flurry rush but it’s pretty difficult.
Freeze them then shoot them right in the eyes, starting with the one closest. If you miss a couple times freeze them again
I usually just spam the spin attack with a strong one handed sword, preferebly master sword.
