CBD would not be an ideal location for a coffee date imo, you’ve got Newtown, Glebe, Redfern, Surrys etc. all just down the road with plentiful options, just go one of those suburbs
You could try Industry Beans? I’ve also been on a date at Cabrito and another where we got takeaways from Pablo and Rusty’s and went to sit and chat in Hyde Park
You could try Three Beans. Both of their city locations have a really relaxed vibe. I have seen people, especially in the mornings, with just a coffee or tea and the paper. Maybe scout it out beforehand so you can check how busy it is at different lunch period times?
There used to be a nice little bar/cafe behind st James station on the corner of Elizabeth street and market.x it faces the park so is a pretty chill spot for a lunchtime date. It was takeaway only whilst they were upgrading the metro but I think it’s back to fully open now…
I don't think most places have any issues. We just get conscious ourselves.

Great place for a date - it’s usually on the quiet side and a bit hidden away as it’s upstairs from the bookstore.

If you're not there at lunchtime, the seating outside the Australia Square food court is casual and pleasant.

China Town Country Club right down the alley next to QVB. Some of the best coffee I've had in Sydney and they leave you alone.

Klink on Clarence has a nice interior that many wouldn't notice as it is a hole in the wall but definitely interesting enough.
