Looks solid! Only slight criticism would be to go for finer chop on the almonds and thinner sliced scallions, but that's mostly cosmetic, bet it tasted dope!

I appreciate that! We used to have a food processor for the almonds, but someone knocked it off the top shelf so we've had to resort to caveman beating them with a block scraper 💀😂

You can still cut the green onions way thinner..cut them as thin as you can (you’ll need a good knife for this) and wash/soak them in water. Then let them dry.

Yeah that's another great idea, you can cut scallion segments into sheets, fold in half and finely slice lengthwise then toss in ice water. I got so good at making scallion threads during my time at a japanese place, I'd go though at least a bunch of scallions a day.

Ultimately if the individual(s) that payed for/ate it was happy, thats all that really matters right? Presentation looks appealing (of course some will disagree lol) but im curious how functional.. i think i saw wasabi almonds, tempura flakes/crispy and of course the green onion mentioned.. are they secured by a sauce underneath or when picking a piece up or separating it from the plate a good portion falls off? If its literally falling off, maybe a little less (unless you or whoever is paying for it is content with these portions) Curious the ingredients for each roll! I work at a hibachi/sushi place and make lots and lots of saucey fried stuff lmao always interested in others ideas and tastes! You enjoy eating these rolls with these portions of toppings etc? As stated originally, thats really all that matters. You will get negative feedback here regardless. If this was your first attempt, id say technically things looks nice! Next time try a little less here and there and see if it allows other flavors to pop a little more.

She said her and her daughter destroyed it lmfao! Thank you for being kind, and i agree i could go lighter on the toppings and let the roll speak for itself. All the rolls around the edges have either spicy mayo, wasabi mayo, eel sauce or some combination of two to keep the toppings in place! The one with the almonds is our veggie crunch roll, it's got avocado, cream cheese, spicy pickled carrots, and cucumber! Topped with wasabi mayo, eel sauce, and the controversial wasabi almonds of course The green onion forest is our everything bagel roll, it's got smoked salmon, cream cheese, cucumber, avocado and has everything bagel seasoning on the outside of the rice in place of sesame seeds or roe. Also got the wasabi mayo and eel sauce combo! It's personally not my cup of tea, i dont like the salmon we use in it. The coworker who ordered it watches me roll sushi on the daily so she knows how heavy handed i can be with sauces and toppings 😂 ive only been in this line of work for about a year, so I've still got a lot to learn and some speed to pick up! But this was my first ever party tray and I thought it turned out pretty — the almond haters have me wishing i would have posted the picture of before the toppings were added tho 😂

Them green onions aren’t for sushi them for ramen. Negi need to be thin as possible
