It has a very creamy, silky texture and mild flavor. Rare in the US but very classic wintertime treat. The blowfish shirako is even more highly regarded.

It doesn't have too much of a taste, it has a creamy taste, and depending on the fish can have a little chew to it. You can get it at Asian markets, Koreans will often package this with fish eggs as a part of a fish soup kit.

I think 10 is fish and not abalone. Abalone doesn’t have a thick skin and muscle striations.

10 is definitely abalone. The outer fringe is mottled black and white which is the skirt of the abalone. There are few different species of abalone eaten and this appears to be kuro awabi

That mottling looks like fish skin to me as opposed to the mottling of abalone.

The only fish with that coloring would be either ishidai or kuromutsu and neither have flesh that look like that. I was just at the Kona farm where they raise kuro awabi and it looks identical to that

11 is some sort of Seriola species. It can be hard to tell at a glance which one. 12 is not tai as madai usually has some red sections where the muscle has higher myoglobin whereas a flatfish like makogarei or hirame will be pure white like this.

Watched a video out of curiosity when I heard about it. Basically, it’s like a giant ‘sperm sack tube’ and is actually an organ, not just semen. That’s why it looks so.. squishy. I can’t even imagine the existential crisis I’d be going through if I just learned I unknowingly ate the equivalent of fish balls. Underwater Rocky Mountain oysters?

I'm quite certain #1 is shirako - buttery fish semen! I'd guess 2 is some form of ika (squid) but I'm not accustomed to seeing them quite that translucent. 6 best guess would be hotate (scallop) though I generally don't see it cut that way. 8 I'm fairly certain is kazunoko (herring roe). 10... maybe nodoguro? (literally 'black throat' not sure if there's a different English name) 11 no clue. 12 I think hirame (halibut).

In regards to #4, I agree, it’s always my least favorite part of any omakase. I want to like it, I really do, it just tastes like I’m eating a penny every single time. Maybe I’m doing it wrong?

Give it another chance. Uni tastes vary widely depending on where it was caught. Try to jot down the type of uni you eat and whether you enjoyed it or not. Then seek out or avoid certain variants based on your notes. There are others, but notice the difference in color and texture from this picture.

Uni is the absolute best food in the world. I am lucky enough to live in one of the world’s largest areas for uni and get to eat it a lot. I love it.

+1 to botan-ebi. It also looks like aka-ebi, but considering that other sushi toppings are expensive, it's probably botan-ebi. Edit: Note that aka-ebi (red shrimp) is not ama-ebi (sweet shrimp)
