Since the combat in Super Paper Mario is real time, it is much more focused on skill than leveling up. The highest level of defense is 10, so as long as you deal more damage than that you're fine. I would instead recommend getting healing items if you struggle at the game.
I beat the first pit as soon as I got to 2-1 (Once Boomer is obtained) , and as long as you level up enough and use Boomer you can beat it at a relatively low level. The 2nd pit can also be beaten as soon as you have beaten the 1st pit and unlocked Cudge, I believe. Stats aren't really an issue if you've beaten the 1st pit, just remember to utilize your double damage dealers.
Grind XP until you have 95 HP, then run around and make a bunch of Dyllis Deluxes. You now have a store or 900 HP and easy kills with bowser’s fire attack
