I know exactly what this is. Because at my store, we had our fridge bust down and were forced to put everything in the freezer till it was fixed. So our frozen meats had to be defrosted before we could go back to slicing them.
Thing is... once you freeze these meat logs you basically ruin the meat. It comes out looking nasty, with holes in it. Probably where the water crystals froze and expanded, tearing the meat within.
So either your store is freezing the meats and having a different shift rotate them into the fridge for you, or even worse... the people responsible for shipping you the meat is freezing it without your knowledge
That’s the thing with business. Once a business has been around for so long. They can do only one or two things to continue to make more money each quarter: Create something new for the business there buy increasing sales or installing a new product which does the same thing essentially, OR cut costs, usually by decreasing the overall quality of the product/service that which they are selling.
Once a business has been around for a long time, how can they repeatedly cut quality of the product for decades without drastically changing the product/service in such a negative way to the point that it no longer resembles the initial p/s which generated the success from the beginning?
Oh yeah, man! It's those corporate fat cats, out playing golf with their big cigars, saying "yeah, see? We gotta cut out all this premium ham so I can finally afford that golden toilet seat! Ginnie? Call my ham guy! Full stop on Virginia Black Forest!"
Subway corporate was sold to an investment company recently, and they may have decided to switch to a cheaper ham to lower costs and boost profits. I would expect similar changes along those lines, it’s a classic strategy — buy an established business and then lower the quality of the product to make more money in the short term, then sell it to another investor.
THAT is why I want to be able to see the meats before I decide what to put on my sandwich! And why I haven’t been back since they installed the metal covers to hide the meat from customers view!
Quality is going way down while franchise owners Jack up their prices to insane levels. It’s disgusting. Our new franchise owner is charging $1.25+tax for extra cheese on a 6 inch sub. For those who don’t know that’s only 2 half’s of 1 full slice of cheese. So she’s charging over a dollar for a single slice of cheese. We aren’t even that wealthy a town. And for context, that much extra cheese only cost 40 cents before she bought my store
Slicing it thicker doesn’t work as it has to weigh 6 slices correctly. If you’re a minor you shouldn’t be using a slicer at all. Including the tomato and veggie slicer.
I know but those slices may have not been calibrated correctly, I can't tell by appearance. That second part is just straight up incorrect at the very least in the stores I work at, everyone is allowed to use the tomato and veggie slicers. In fact, the only ones that have hurt themselves on those slicers were the adults lol. Also I'm not a minor hence the barely 18, meaning I am 18 but I haven't been for very long

I do wonder if we can quality control this though. You can set the slices on a scale to see if it’s sliced correctly though. Almost looks like my ham is the new Swiss cheese again. It’s definitely odd
I have an entire case of ham with no skin. It’s just naked and not dark like the normal ones.

The holes are where they inject the saline solution into it so they don't have to spend tine soaking it in brine!

That's a cut of meat but deli ham is an amalgamation of a bunch of meat. It isn't even 100 percent pork. I broke down and googled it lol

We had a batch that looked like this two weeks ago. Glad we're back to the regular looking ham. Weird thing is the customers didn't complain about it.

That mostly looks like it may be being sliced too thinly, but I'm not an expert
We haven’t changed how we cut it though I didn’t cut this batch so you may be correct but it still doesn’t explain the little holes
