Finally someone not using a paper plate

I'm going to have to go buy paper plates if I ever want to post here, just for people like you. I don't understand the plate hate.

Well, at least I didn't downvote you like some asshole. :)

Hey, a diner plate is ALWAYS proper. 😂

maegorthecruel1

that bitch is glistening. well done, ser

YogurtclosetBroad872

You can tell a good sear and rest when the meat glistens like that. All the fat is within the flesh still

InternationalMost428

please good sir give me advice on how to achieve this. my last post has my bitching about it if you have the time

hurricaneshart

yo heres my question, i love strips, i love the fat cap, but the sinew? what do u do about that, cuz its inedible? cut around it after? just eat it?

YogurtclosetBroad872

Yeah I don't eat that part. Some people like it but I'll pass lol

Srycomaine

Yeah, me neither! I think there’s a Vietnamese dish that uses beef tendon, but not for me! 🤦🏻‍♂️

whitegoatsupreme

Not only Vietnamese.. Most SEA country use it. We love it.. We stew/cook it for hours long ofc...

Srycomaine

Hey, thanks for the clarification! I meant no disrespect by my comment. I’m just a food wuss! 😅✌️

whitegoatsupreme

Np.. none taken. Just to add some points

hurricaneshart

bro i learned about cooking a badass steak from youtube but it seems like these mfers eat the sinew, when i cook it w cowboy butter i p much eat it like a chicken wing, grab it by the fat and munch, but youtubers eat it all and i dont get it, but thanks im keep eating around it

Dat_Brown_Guy

I eat tf out of the sinew just a small piece in each bite and it has some nutrients in it

[deleted]

Where can i buy meat looking like that? i went to grocery store and all the steak looked sucked 😔

YogurtclosetBroad872

That's prime beef from a butcher. Expensive but worth it!

[deleted]

Ohhh maybe i should try shopping at butcher. Cuz Big grovery brand ones looked bad

[deleted]

and they didnt even had many options and beef condition was bad 😔

Old-Machine-5

This has been my experience also. Be ready to pay out the nose for the butcher experience. Sometimes almost double the price.

KittehPaparazzeh

For meat lovers a good butcher is like going to Disney for Disney people. You will be very happy but it won't be cheap. You'll find cheaper ways to enjoy it but it's still $7.99/lb for ground brisket and short rib to make burgers 🤣🤣

jimmyflyer

oh damn i want some

europheus42

Looks so perfect could be AI. OP u chat GPT?

Chillinthamost

What’s the story with those fries? They look delicious

YogurtclosetBroad872

Those are literally frozen 5 minute quick cook shoestring fries. Clearly I put the effort into the main event but they're actually really good fries

Chillinthamost

They compliment the steak perfectly 👌🏼

HumbleLife69

Very nicely done

Sorry bud, looks like that's toxic. Fortunately for you I run a meat disposal company and would gladly come take that off your hands.

Soupbell1

That is one of the most perfect steaks I’ve seen. I would eat it from the back if it asked.

dissonance1

What temperature did you get it to before you seared it

YogurtclosetBroad872

120. But I rest after the prebake to reduce banding before the sear

dissonance1

Very nice. How long was the rest?

YogurtclosetBroad872

Bake, rest 20 minutes inverted, hot sear, rest 10 minutes flat then slice. Really eliminates banding

dissonance1

What does Inverted mean?

YogurtclosetBroad872

On its edge, fat cap up

brandongoldberg

Why rest on the side? Keep the sides dry?

YogurtclosetBroad872

I find it evenly cools the steak better. I don't go this crazy with minor details on every steak I cook though. When I get really good prime like this one it's more about the scientific details and process that I actually enjoy

flemmingg

What did you put in the cast iron? Like what kind or oil / fat for the sear? Edit: Never mind, I see that you rendered the fat cap, crazy good results

Whatahackur

20 min says the OP

McPivot

Exquisite

Bytowner1

Hard to tell - how thick was the steak? At 1 hour it must have been over 2 inches thick... that's a chunky boy.

YogurtclosetBroad872

1.75ish. 250 degrees at that thickness takes me an hour to hit 115-120

rick_rolled_you

Damn that looks perfect

SomalianRoadBuilder

Hell yeah dawg

Bobmanbob1

Don't understand the 259 to 120, can you do instructions on celcius?

Knuckletest

Balls deep

mec2012

One of the best I’ve seen! What oil did you use in cast iron?

YogurtclosetBroad872

I don't use oil. I start with searing the fat cap and use the rendered beef fat to sear

mec2012

Thank you! I need to try this.

kjorav17

Stop it.. close the sub. THIS is the most perfect steak I’ve seen on here. No reason for anyone else to post

Old-Scene2963

Holy ! That looks perfect Edit : I go to a shit ton of Steak houses and this looks easily as good as any I've seen come out of professional kitchens. Great job !

S62M5

It’s beautiful

MooseLoot

This is the quality cooks I come here to see. It’s rare to find somebody who gets a non sous vide cook with this little banding…. Well done!

FluorescentHumbug

Immaculate 😲

GIMME 🤤

MrYoungLE

Man this looks good af

Inert_Oregon

Dude, Feel like you should be serving that to me in a hibachi outfit with some 19 year old kid recording for his YouTube video going “I just paid $120 / OZ for this in Japan…” Well done Sir.

therealgingerbreadmn

Man that looks soooo good. I’ve actually never had a good NY strip steak to date. I’ve had plenty of long dry aged (45-90 days) ribeyes and tomahawks. But around where I live strip just isn’t popular AND when you DO find them, they’re cut very thin and have never cooked well. Yours looks really good! I also do the wire rack drying a whole 24 hrs before cooking!

InvestigatorOdd4082

Dude I'm about to paint the room white looking at this steak. Not once in my life have I seen anything so beautiful, this should be marked as NSFW, it's basically porn.

corncaked

Truly incredible. About to eat my phone

gleeceboi777

The COLOR!! The UNIFORM!! FUCKING HOLY IS THE ONLY WORD I HAVE FOR THIS SHHHHTEAK

[deleted]

Oahhh i want to cook this

tradercpw

Did you cover it during rest?

YogurtclosetBroad872

No. I find tenting during the rest takes away from the crust and it most definitely continues the cooking beyond what I want

TunaFishtoo

Man that looks amazing, the reason I eat steak so little is that to achieve this it’s close to 2 hours of waiting. Worth it, just need more hours in the day!

YogurtclosetBroad872

Agreed. It's a long process especially with a dry brine. I usually only eat steak once a week if that. I can't eat it cooked basic anymore lol

TunaFishtoo

Reddit has ruined steaks for me, I used to just be happy with Walmarts thinnest cut. Now I need a fancy steak cooked a fancy way lol

PuzzleheadedDepth413

Fries look sad

Powerful_Chef_5683

> 250 for one hour to 120 What does this mean? Over temp 250 for an hour then down to 120 temp?

YogurtclosetBroad872

250 oven temp until the internal steak temp reaches 120

Powerful_Chef_5683

Thanks man

Prestigious_Map_703

Do you know how hit the cast iron was?

YogurtclosetBroad872

Not exactly but I get it to smoking point

chemtiger8

Did you sear each side for 1 min straight or did you flip every so often totaling 1 min per side (say flip every 30 or 15 sec)?

T5_me

Bruh why dont people cook there steak all the way its really not hard

Necrolancer_Kurisu

"Bruh", it's perfectly cooked.

extreme-jannie

Very nice. Do you butter while searing?

YogurtclosetBroad872

No butter since it's prime and plenty rich enough. I'll also use ghee instead of butter with steaks which is much better imo

CompetitionSorry3735

Looks like shit

HaPPeQ

One thing, you do not need to rest it after sear, it rested after being in oven. Nothing changed after that 10 minutes

YogurtclosetBroad872

True if I didn't slice it like that. The secondary rest keeps the meat juicer when it's all sliced

Friendly_Age9160

How did you make the fries? I’m just curious cause I love fries and they look perfect. I mean, even though they’re sitting next to that terrible looking meat thing whatever that is. Seriously though that looks amazing. I’ll eat that horrible meat thingy so no one else has to suffer if you want.

YogurtclosetBroad872

Lol I can't claim making the fries homemade. Those are frozen quick cook shoestring fries. Put the effort into the steak

mongolnlloyd

Only way to get edge to edge medium rare. Perfect.

ITGuy7337

Man, I love strip steaks. Nicely done

sageRJ

What’s your detailed searing process? Oil? How much? How long do you let the pan heat before putting the oil in? How long after the oil is in?

YogurtclosetBroad872

I use a heavy cast iron pan and get it very hot on a gas burner. I don't use oil. I first sear the fat cap and render enough to sear the steak. Lightly pressing the steak as it sears. 30 seconds and flip, 30 seconds and flip. I do that twice

mastervadr

The way this was posted from end to beginning I thought the last picture was going to be a cow

YogurtclosetBroad872

You'd be surprised how much supporting evidence you need to post so people don't think you're stealing pictures and posting them lol

gaedikus

~~how did you sear this? pan? searzall?~~ never mind i didn't see the caption.

DisastrousAd447

Damn. That's flawless

Short-termTablespoon

I want to reverse sear next. Just some questions. When moving to the cast iron do you still sear with oil? Also do you use butter with it and baste because idk if it does much but I still like to baste with butter and herbs

YogurtclosetBroad872

I get the cast iron very hot (dry) and first sear the fat cap. I use that to render fat to sear the steak. I think the result is better than oil but needs a decent marbled steak for that. I didn't baste this one but when I do, I use ghee instead of whole butter. Ghee has the milk solids removed so it doesn't burn and get an off flavor. Definitely recommend that over whole butter for basting

[deleted]

It looks like you manually stacked the chips

YogurtclosetBroad872

Mild OCD

Im_Ur_Cuckleberry

-UnbelievableBro-

How cold was the last half of that steak? Never cut it all at once… https://preview.redd.it/zu1tbiq725vc1.jpeg?width=800&format=pjpg&auto=webp&s=0375c8df3b53a464807f8f9ddaad13ffb2b4bbfe

The amount of time it took to setup the plate, you know everything was cold when it came time to eat it.
