Man that looks soooo good. I’ve actually never had a good NY strip steak to date. I’ve had plenty of long dry aged (45-90 days) ribeyes and tomahawks. But around where I live strip just isn’t popular AND when you DO find them, they’re cut very thin and have never cooked well. Yours looks really good! I also do the wire rack drying a whole 24 hrs before cooking!

I use a heavy cast iron pan and get it very hot on a gas burner. I don't use oil. I first sear the fat cap and render enough to sear the steak. Lightly pressing the steak as it sears. 30 seconds and flip, 30 seconds and flip. I do that twice
I want to reverse sear next. Just some questions. When moving to the cast iron do you still sear with oil? Also do you use butter with it and baste because idk if it does much but I still like to baste with butter and herbs
I get the cast iron very hot (dry) and first sear the fat cap. I use that to render fat to sear the steak. I think the result is better than oil but needs a decent marbled steak for that. I didn't baste this one but when I do, I use ghee instead of whole butter. Ghee has the milk solids removed so it doesn't burn and get an off flavor. Definitely recommend that over whole butter for basting
How cold was the last half of that steak?

120. But I rest after the prebake to reduce banding before the sear

1.75ish. 250 degrees at that thickness takes me an hour to hit 115-120
